Eli Shanks
HEAD CIDERMAKER
Eli is the one behind the scenes keeping the cider flowing here at Western Cider—from fermentation and blending to production planning.
Originally from Boston, Eli first learned to make cider as a teenager while working at an orchard in Concord, Massachusetts. He’s been involved in cider and agriculture ever since, building hands-on experience that shaped a practical, no-nonsense approach to cidermaking. He came to Missoula by way of Chile. While living there with his wife Andrea and son Woody, he founded Valparaiso Cider House, a cider bar and restaurant, which eventually led him to co-found and operate Punta de Fierro Cidery in Valdivia, Chile. He worked extensively with both traditional and experimental styles and deepened his understanding of fermentation, blending, and medium-scale production.
At Western Cider, Eli focuses on improving consistency, quality, and efficiency for our old standbys, while continuing to make innovative additions to the cider lineup. He’s especially interested in refining systems, reducing waste, and making ciders that are expressive, dependable, and meant to be enjoyed.
When Eli isn’t in the cellar, you’ll likely find him woodworking, welding, or building something—usually with the same mindset he brings to cider: make it solid, make it work, and make it better than it was before.
